I might be in a position to want to order Pt v2 and Ft+ v2 boards in larger quantities in the kind of time horizon that I would like to dial in on availability. If I wanted, say, 50 of each, what kind of advance notice would you want? Or should I direct these kinds of queries to SparkFun because they also sell them? If you’d prefer to internalize the order I’d be happy to shop here first! 
If the Ft+ boards are difficult or annoying to stock/manufacture, something on my roadmap is actually to just put the FT601 directly on my carrier board and route it pin-compatibly to the connectors. Knowing in advance whether I want to prioritize developing that would be useful! It’s the kind of nice-to-have thing because it reduces the stack height, and also the total per-unit cost, but for an initial version, I would be happy to just offload the FT601 work and pay a little more.

We often have stock of boards in the 50-200 range. If you know you need something and it is out of stock, under normal circumstances it takes 1-2 months at most to get back in stock.
Stock has recently been a bit short for things as the chip shortage has made it harder to source parts especially at reasonable prices. We also decided to move manufacturing back in house which has taken some time to get going.
That being said, we have a decent number of Ft+ in stock and the Pt is the next batch to be made. Likely about two weeks.

The chip shortage affects all kinds of things. My project uses a Raspberry Pi5 as well, and it’s going to be expensive to stock up on those too. Fortunately the memory needs are modest, even the 2GB models should be plenty. Which is good, because the memory is the majority of the cost for the bigger ones! I’m sure that even with only 256MB DDR3, that’s one of the line items which is disproportionately expensive per Alchitry board these days.
RAM is definitely bad but it’s not all that’s hard to get. The ram on the Au and Pt is about 10x the price that it was if you can even find it. I think it’s like 40x on DigiKey right now.
The FPGAs are also hard to get and have been 3-10x the price as well. Same for the FT2232HQ (USB interface).
Lead times on parts from places like DigiKey are over a year for some things now. It’s pretty wild.
